Step 1 Prepare the Panelle
To prepare the Panelle, prepare a chickpea dough by adding water with a pinch of salt to the chickpea flour and kneading a soft, lump-free dough. You would know the dough is ready when it comes off the bowl on its own.

Step 2 Spread the dough on a tray and cut into rectangles
Meanwhile, oil a tray and pour the soft dough on the tray. It will spread and the thickness should be around 1.5 cms after it spreads. Let it rest and cut in rectangles after it 5 minutes.

Step 3 Deep fry the Panelle and season with some salt and pepper
Heat the olive oil for deep frying and fry the Panelle. Keep them aside and sprinkle some salt and pepper with a few drops of lemon juice.

Step 4 Prepare the Cazzilli
To prepare the Cazzilli, boil and peel the potatoes. Mash them with a potato masher and add in the parmesan with the bread crumbs. Now, add the nutmeg powder with salt and pepper and give it a good mix.

Step 5 Preapre a flour and water mix to fry the Cazzilli
Prepare a thin flour and water mixture to dip in the Cazzilli before frying and some bread crumbs with some parmesan cheese in another plate.

Step 6 Create croquettes and fry them
Create cylindrical croquettes with the potato mash mix and coat them in the flour-water mix and then in the bread crumbs mix and into the hot oil for frying. Fry and serve hot!
