Chicken Vindaloo Recipe
Chicken Vindaloo is a delicious Goan recipe which is prepared with chicken, tomatoes, potatoes, onions, chicken broth, white wine vinegar and a melange of whole and ground spices. Step 1
Firstly, wash chicken under running water and put it over a chopping board, and cut the pieces into cubes. Transfer to a large bowl and keep aside. Then, peel the potatoes and cut them into cubes too in a bowl. Now, peel and chop the onions, dice the tomatoes and grate the ginger in a separate bowls. Finally, peel the garlic and mince well.

Next, place a frying pan over medium flame and dry roast turmeric, cinnamon, coriander seeds, cloves, cumin, paprika and cayenne pepper in it.

Now, add olive oil, chopped onions, garlic and ginger in the pan and saute for 5-6 minutes.Once the onions are sauteed, add the tomato paste in the pan and stir well.

Then, add the chicken pieces, potatoes, tomatoes, chicken broth, wine vinegar along with bay leaf in the pan, and stir the mixture well. Cover the pan with a lid and boil the mixture, cook until potatoes are soft and tender.

Remove the lid and cook the chicken until it thickens. Season with salt and black pepper powder as per your taste and turn off the burner. Transfer to a serving bowl and enjoy!
