  • Step 1

    To prepare this fulfilling sandwich, first take a small sized pan and place it on medium flame. Then, pour some cooking oil and add few pieces of ginger in it. Then, add cumin seeds and mustard seeds in the pan. Sautee the seeds until they crackle. Then, turn of the flame and add salt and red chili in it as required. Now, transfer this mix along with lemon juice in a blending jar and shake until you get a smooth paste using a blender. Next, dip the remaining pieces of ginger in the paste for at least 12 hours so that they marinate well. You could also keep it aside for 2 days to get better flavours.

    Once done with the marination process, take a medium sized non-stick pan and place it on medium flame. Pour some oil in pan, let it heat, then add coriander leaves in it and sautee well. Next, add onions in the pan and cook until golden brown. Then, add tomato and tomato ketchup in the pan and cook for a while. Sprinkle salt, red chili, turmeric powder in the pan and mix well. Cook this mixture on low flame for next 15 minutes. Then, add few pieces of marinated ginger along with lemon paste and paneer cubes in the pan, turn the flame off and mix. Next, garnish the mixture with remaining marinated garlic pieces and cover it for a while.

    Now, take a separate medium sized vessel and pour some water in it. Add some salt in water and let it boil. Then, blanch the spinach leaves by dipping them in hot water. After 2 minutes drain the water completely and finely chop the vegetable and keep aside.

    Next, take a large sized non-stick pan and melt butter in it on low flame. Then, add garlic and shallots in the melted butter and cook for next 2 minutes. Once the texture of garlic and shallots is soft, add blanched spinach in it. Cook well on medium flame until some water is released from the mixture. Then, add cream and nutmeg in the pan, cook until the cream melts. Next, add salt and pepper as required and mix well. Turn off the flame and transfer the mix in a bowl.

    Lastly, toast the pita bread and serve it with the flavorous mix prepared.
