No mention of Gujarati food can be complete without the quintessential "Dhokla".Simply steamed protein-rich and super tastyMost people know the"Khaman" version. We use chickpea flour or 'besan'  to make Khaman. It has a distinct yellow color. The dal & rice version is the actual dhokla. Mixed dal dhokla is also a great way to start your day. It is fermented so is great for the gut & is a powerhouse of nutrients. Mix dal recipe is a great way to have proteins.

Kids and aged people can also enjoy mixed dal dhokla. It has minimal oil & spices. It has everything for everyone. Bit of sweetness, some acidity, and loads of nutrients.

Ingredients:

  • 1 Cup Rice
  • 1/2Cup of Mung Dal
  • 1/2 Cup of Channa Dal
  • 1/2 Cup of Arhal Dal
  • 1tp Spoon Yogurt
  • 1/2tp Spoon Turmeric
  • 1tp Spoon Ginger Garlic Pest
  • Salt (As Per Test)
  • 1/2tp Spoon Cooking Soda

For Tempering:

  • 2tp Spoon Oil
  • 1/2tp Spoon Mustard Seeds
  • 1/2tp Spoon Cumin Seeds
  • 1 Piece Of Chopped Green Chilli
  • 2 to 3 Pieces of Curry Leaves
  • 1/2Cup of Water
  • 1tp Spoon Sugar

For Garnishing:

  • Coriander Green Chutney
  • Date palm and Tamarind Sweet And Tangy Chutney
  • Garlic Spicy Chutney
  • Cheese
  • Sev
  • Coriander Leaves

સામગ્રી:

  • 1 કપ ચોખા
  • 1/2 કપ મગની  દાળ 
  • 1/2 કપચણાની  દાળ 
  • 1/2 કપ અરહલ ની દાળ
  • 1 ચમચી દહીં
  • 1/2 ચમચી હળદર
  • 1 ચમચી આદુ લસણ પેસ્ટ
  • મીઠું (પરીક્ષણ મુજબ)
  • 1/2 ચમચી રસોઈ સોડા

વઘાર માટે:

  • 2tp ચમચી તેલ
  • 1 / 2tp ચમચી રાય
  • 1 / 2tp ચમચી જીરું 
  • 1 નંગ કાપેલું લીલું મરચું
  •  2 થી 3 નંગ મીઠા લીમડાના પાન
  • 1/2 કપ પાણીનો 
  • 1 ચમચી ખાંડ

સુશોભન માટે:

  • કોથમીરની લીલી ચટણી
  • ખજૂર અને આમલીની ખાટી મીઠી  ચટણી
  • લસણની મસાલેદાર ચટણી
  • ચીઝ
  • સેવ
  • કોથમીર

Tips:

  • Blend with minimum water & salt to get a thick batter, keep it aside for 6 hrs/overnight
  • In a pan, heat oil and temper curry leaves, mustard, and chilies and add the dhokla pieces to tempering.
