Kerala Chicken Roast Recipe is a no-fuss recipe that is loaded with flavours. Chicken is marinated in spices and cooked in an onion tomato gravy. The fiery red colour and the delicious gravy of the chicken curry are sure to impress you as well.

  • Step 1

    To prepare this quick chicken recipe, you must begin with soaking the chicken pieces in lukewarm water, this removes impurities from the chicken and then, rinse the pieces with clean water and drain out the excess water.

  • Step 2

    In a large bowl add turmeric powder, chili powder, coriander powder, garlic cloves, green chilies, lemon juice, and salt as per your preference. Mix these ingredients well and blend them into a smooth mixture.

    Take a large tray and marinate the chicken well. Allow the chicken to absorb the juices well and keep them aside for an hour. In the meantime, chop the onions.

    Next, heat a pan over a medium flame. Once the oil is hot enough, fry the onion and drain out the excess oil and keep the onions aside. In the same oil, add the marinated chicken and cover it with a lid. The chicken will cook in the steam.

  • Step 5

    Take another pan and heat oil, add slit green chilies and curry leaves, saute for some time and then add tomato puree. Now, add the roasted chicken and cook till the puree dries up. Add lime juice and salt. Last but not the least, add crispy onions and mix well. Serve this delicacy with appam and delve into its amazing flavors!
