Step 1 Cook soaked rice for 20 minutes
Rinse and soak rice for at least 20 minutes. Cooked in boiling water.

Step 2 Saute garlic and onion
Heat olive oil in a pan on medium heat. Add garlic and onions, cook for a few minutes until onions have become transparent.

Step 3 Cook all the veggies with rice and serve hot
Add tomatoes and capsicum and cook for a minute. Add corn and kidney beans mix well. Now add cooked rice and mix well. Cook for few minutes, serve hot.
