  • Step 1

    Cut brinjal or eggplant into 2-inch long pieces and keep them in water to avoid decolouring. Peel the onion and chop in a bowl, then slit the green chillies in another pan.

    Put a pan on medium flame and heat oil in it. When the oil is hot enough, add the mustard seeds, cumin seeds, black gram and red chilli. Let them splutter and add green chillies along with curry leaves in it. Saute for a few seconds and then add the finely chopped onion in it. Saute till the onions are translucent or pink.

    Next, add brinjal/eggplant pieces in the pan. Mix all the ingredients well and then add turmeric along with salt in it and let the vegetable cook for about two minutes.

  • Step 4

    Then, add a little water in the pan and milk. Stir once and cover the pan with a lid, let the brinjals cook till it it soft and tender. This should not take more ten minutes. Stir occasionally so that the brinjal doesn't stick to the bottom.

  • Step 5

    Once the entire milk curdles and the brinjal is cooked, turn off the stove. Serve it hot with rice or roti.
