Step 1 Preheat the oven & make the cookie mixture
To begin with, preheat oven to 175 degree Celsius. In the meantime, take a bowl and add ricotta cheese, butter, sugar, salt, eggs along with vanilla extract and mix thoroughly.

Step 2 Add flour, roll into balls & bake!
Gradually, add flour and baking soda to the mixture. Stir in lemon peel. Grease cookie sheet with butter. Then roll out few lemon sized balls and place them on the sheet. Bake for about 10-15 minutes.

Step 3 Let them cool & serve
Once done, take them out and allow them to cool. Your Lemon Cookies are ready to be served and savoured.

If you want the lemony flavours to really shine through, add lemon juice along with the peel to the dough.

You can also use granulated brown sugar to this cookie recipe instead of white sugar.
