  • Step 1

    Deep-fry curry leaves in a saucepan, drain all the excess oil and reserve in a bowl. Blend fried curry leaves, ginger, garlic, chillies, lemongrass, lemon rind, lemon juice in a blender to make a smooth paste and sprinkle salt.

    Put the boneless and skinless chicken in a bowl and marinade with the curry-lemon paste, cover it with a plastic sheet and refrigerator for some time.

    Carefully put the chicken on the satay sticks. Meanwhile, heat oil and butter in the pan, add the chicken skewers and cook over medium flame.

    To prepare the salad, toss sliced onion, tomato, cucumber, lemon and chopped coriander leaves in a medium bowl. Add red chilli powder, roasted cumin powder and sprinkle salt. Toss the bowl to mix the salad and refrigerate for some time.

    Make the dip by mixing mayonnaise, garlic paste and tobacco sauce in a bowl. Serve the chicken skewers hot with the chilled dip and salad.
