Ingredients:

For Filling :

  • 6 tablespoon powdered jaggery
  • 4 cup grated coconut

Recipe :

  • Step 1

    To prepare this amazing breakfast dish, sift and mix together flour, baking powder, and salt in a bowl.

  • Step 2

    Break the eggs in another bowl and beat them with sugar till fluffy. Then, add milk into this mixture.

  • Step 3

    Pour the eggs and milk mix into the flour gradually to avoid the lumps from forming.

  • Step 4

    Beat it well for a while till it turns into a smooth batter. Once it is done, leave it aside for around 15 minutes.

    Now, put a 6 inch frying pan on medium heat and grease it lightly with ghee.

  • Step 6

    To make crepes, pour around 2 tablespoons of batter into it and tilt the pan so that the entire base has a thin coating. Cover the pan and cook it for a minute.

  • Step 7

    Remove the crepe and put aside. Repeat the process to make more crepes till all the batter is used up.

  • Step 8

    Moving on to the filling, put a pan on medium flame. Add coconut and jaggery into it and cook for a bit. Once done, remove from heat and let this mix cool down.

  • Step 9

    Finally, take a crepe and place some filling on it and roll it gently. Repeat the process with all the crepes.

    Serve these coconut crepes with a garnish of coconut or fruits and syrup.
