  • Step 1 Prepare the mixture of flours

    Take a large bowl and mix rice flour, whole wheat flour, gram flour, cornflour in equal quantities, mix well. Meanwhile, peel the bottle gourd and grate it into another bowl. Leave aside for 5-10 minutes. Then squeeze the water out of grated bottle gourd and add into the flour mixture. (Note: You can use this grated bottle gourd in making lauki ka raita by boiling it.)

  • Step 2 Make long sticks using the mixture

    Then, add sesame seeds, carom seeds, turmeric, finely chopped coriander leaves, salt to taste and a pinch of eno to the flour mix. Mix all the ingredients well and then make long sticks using this mixture just like the way we make gatte.

  • Step 3 Steam the sticks

    Now, either steam these sticks using a steamer or you can boil 2 cups of water over medium flame. Then, put a large sieve over this boiling water and add the sticks in it. Steam till they are a little light. Once done, keep them aside and let them cool.

  • Step 4 Stir fry the steamed sticks in the spices

    Finally, put a kadhai over medium flame and heat oil in it. When the oil is hot enough, add black mustard seeds, cumin seeds, green chillies, curry leaves, coriander leaves, and sesame seeds in it. Let them crackle for a few seconds and then add the steamed sticks in the kadhai. Fry them well and serve hot.
