Step 1 Heat oil in a pan and chop veggies
Firstly chop the veggies as per your choice and keep them aside. Add oil to a pan. Add cumin seeds and asafoetida. Let them splutter for a minute. Then add ginger-garlic paste. -
Step 2 Add tomato puree
Now add tomato puree and mix. Cover the lid and let it cook for 5-6 minutes. Keep stirring in between. -
Step 3 Add the veggies
Now add all the veggies and give a proper mix. Add 1/4 cup water and let it cook for five minutes. -
Step 4 Add the masalas
Now add turmeric, coriander powder, dry mango powder, red chili powder, garam masala, fennel seeds, and salt. Mix well and let it cook for 10-15 minutes. -
Step 5 Add curd
