Kurkuri Bhindi also known as Crispy Bhindi or Okra Fry, is a Punjabi preparation that is served as a side dish and even as a snack dish with masala chai.

  • Step 1 Wash okra, pat dry and cut into strips

    To start with, first of all wash okra under running water twice and then pat dry each piece using a cotton cloth. Once done, remove the head and tail and cut into thin strips. Set aside.

  • Step 2 Prepare the marination

    Take a deep bowl, add gram flour (besan) along with red chilli powder, turmeric powder, garam masala powder, cumin powder, chaat masala powder, salt and cornflour. Mix all the ingredients well using a spatula and add 4-5 drops of water to blend everything together.

  • Step 3 Add okra to marination and mix well

    Once, the marination is ready, add okra to it and mix all the ingredient together. Set it aside. In case you want extra crunchiness, add a small portion (2 teaspoon) of roasted semolina (sooji) to it.

  • Step 4 Deep fry on slow flame

    Now, take a deep wok and heat refined oil. Once the oil reaches its smoking oil, slow down the flame and add marinated okra to it. Deep fry till the pieces turn golden. Once done, place the fried okra on a tissue paper to absorb extra oil.

  • Step 5 Garnish with lemon juice and serve

    Place the fried okra in a deep serving bowl and garnish with lemon juice. Serve hot with main course dishes or as a snack with masala chai. Enjoy!

  • Step 6 Tips to be kept in mind

    Use of semolina makes the recipe crunchier. Try not to leave the marinated okra for a longer period as it might release water and spoil the dish. Always deep fry on a slow flame, so that the dish is even cooked.
