  • Step 1

    To prepare this curry, first neatly wash bitter gourd under running water. Then, peel and cut them into thin slices. Once done with slicing, take a medium sized pan and place it on medium flame. Then, pour some oil in the pan and let it heat. Now, carefully fry the sliced bitter ground in it until crisp. Place the slices on absorbent paper after frying and keep them aside.

    Next, take a small sized pan and place it on medium flame. Roast coriander seeds, chana dal, dry red chili, black pepper and grated coriander in it for next 3-4 minutes. Then, take the small blending jar and transfer these spices in it. Blend the spices on maximum speed until granulated well.

    Now, take a large sized pan and place it in medium flame. Then, add bitter gourd pieces along with half cup of water in it and stir for a while. Then, add salt, turmeric, prepared spice mixture, tamarind paste, grated coconut, boiled toor dal in it and stir for next 5 minutes. Now, turn down the flame and let it simmer for next 10-12 minutes so that the the flavours of spices are infused in the mixture well. Once the curry has cooked well, transfer it to the serving bowl.

    Lastly, place a small sized deep pan on medium flame and add some oil in it. Once the oil heats, add curry leaves, asafoetida and mustard seeds in it. Cook them until they start to crackle. Decorate your curry with this mixture and then serve hot.
