Cakes are not always related to birthdays or anniversary parties, but it can be enjoyed anytime you want to pamper yourself. Some cakes are full of cream, some are made with chocolates and others made of cherries and much more. Today we will make a very simple eggless cake using semolina (sooji), sugar and milk.

  • Step 1 Add milk in semolina and let it settle

    To start making this delicious cake, take a bowl and add 2 cups of semolina with 1 cup of milk. Let it rest it for 5 minutes so that the semolina soaks the milk and expands. Use a strainer to strain the baking powder and baking soda before use.

  • Step 2 Mix all ingredients well to prepare a batter

    After 5 minutes, add the strained baking powder, baking soda, salt, powdered sugar and vanilla essence in the semolina. Mix well. Now add the oil to the mixture and mix it using a whisk till all the ingredients are completely blended to make a thick batter. After that, if you think that your batter is very thick you can add some water to thin out its consistency.

  • Step 3 Pour the batter in the baking tray

    Take a baking tray and brush it with oil. Now sprinkle flour on a tray and cover the base and sidewall by tapping it gently. Add the batter on the baking tray, put the tutti frutti cherry on top of it.

  • Step 4 Bake for 40 minutes

    Preheat your oven for 5 minutes, set the temperature at 180 degree celsius. Put the cake batter tray in the oven and cook for 35-40 minutes.

  • Step 5 Let the cake rest at room temperature and serve

    Post baking, check the cake using a toothpick. Poke it in middle, if it comes out clean then your cake is ready. Rest it for 30 minutes before eating.

Tips :

  • You can also add coarsely crushed dry fruits to your sooji cake as per your taste.

  • Serve sooji cake slice with your evening masala tea.
