Janthikalu Recipe
Crispy Jenthikalu is a popular tea time snack coming all the way from South. It is made with rice flour, besan and the right kind of spices which makes the snack as delicious as ever. All you need is a Murukku maker to get the perfect spirals for Jenthikalu.

Step 1 Boil the water
First add water to a pan and set it on medium flame.

Step 2 Mix dry ingredients
Take rice flour in a bowl, add cumin seeds, red chilli powder, salt, white sesame seeds and roasted gram flour. Mix all the dry ingredients properly.

Step 3 Mix dry ingredients with water
Once the water has boiled, add the dry ingredients to it. Keep mixing it in order to prevent any lumps.

Step 4 Knead the dough
Once everything is mixed, knead the dough with your hands to make it soft and smooth. You can add a little water at this point to make the dough smoother.

Step 5 Form a log
Give the dough a shape of a log. Once done, transfer the dough to the Murukku maker and choose the attachment of your choice. Usually, for Jenthikalu the attachment with several holes is selected to give perfectly connected spirals.

Step 6 Heat oil and fry
Heat oil in a kadhai for frying purpose. Now press the Murukku maker and make spirals directly in the oil. You can also make spirals beforehand, directly on a plastic sheet and later drop it in the oil.

Step 7 Fry until crispy
Fry Jenthikalu from both sides on medium heat until golden and crispy.
