  • Step 1 Wash and dry the chicken

    To begin with this delicacy, wash and pat dry the chicken breasts. Take a knife and make incisions, starting from the centre, cut it in half but not all the way through, leave it joined at the side. Cut the chicken breasts in a way that it forms the shape of a heart when it is opened.

  • Step 2 Flatten the chicken

    Next, place the chicken breasts over a cling film leaving space all around for it to get flatten. Next, take a rolling pin and gently roll over the chicken breasts and flatten them gently. Make them as thin as possible.

  • Step 3 Make the chicken coating

    Now, take 3 different big plates or flat platters. Put flour in one, second beaten egg and in the third put the breadcrumbs. Next, season the breadcrumbs with salt, pepper and mixed herbs ( like dried oregano, rosemary, thyme ) you can even use Italian mixed herbs. However, in this recipe we have used salt, pepper and Italian herbs for seasoning, you can add your own twist of spices to season the breadcrumbs.

  • Step 4 Heat the pan

    Now in a pan heat some oil, in this recipe we are not deep frying the chicken breasts rather we will just shallow fry.

  • Step 5 Coat the chicken

    Remove the flattened chicken from the cling film, coat the chicken with the flour, dust off any extra flour, then dip in the egg and finally in the breadcrumbs. Ensure that you coat the breadcrumbs generously, as this will give your dish a crispy texture on the outside.

  • Step 6 Cook the chicken

    Once the pan and the oil is hot, put the chicken gently. Cook for 3 minutes each slide, keep checking and flipping the sides, and make sure that the chicken doesn't burn. Once the chicken turns golden in colour, if the flame is too high, reduce it medium till the chicken is cooked nicely.

  • Step 7 Drain the excess oil

    Place the chicken breasts on the kitchen towel and let them rest for 2-3 minutes. Transfer the chicken to the serving dish and serve along with a nice green salad or wilted spinach or any greens of your choice. You can even drizzle a few drops of lemon juice if you like.

  • Step 8 Serve it with salad and relish!

Tips :

  • To make this dish more enticing you can marinate the chicken with ginger and garlic for half an hour and then cook.

  • Serve the chicken breasts with mashed potatoes and stir fry veggies to make it a wholesome meal.

  • You can also make a nice white sauce and serve it with the delicacy.
