Mango Gazpacho Recipe

Gazpacho is a chilled soup made by blending raw vegetables and is one of the popular dishes of Spanish cuisine. This chilled soup's origin is in the southern region of Andalusia and is popularly enjoyed with toasts made of white breads. The traditional gazpacho recipe is prepared using bread, tomato, cucumber, bell peppers, onion, garlic, olive oil, wine vinegar, water, and salt.

  • Step 1

    To prepare this interesting soup recipe, peel the mango and dice it well. Next, peel the onion and finely chop it in a bowl. Then, wash the yellow bell pepper and dice it and take a diced cucumber and de-seed them. Finally, wash the parsley and finely chop it too. (Note: Leave aside a few diced mangoes for garnishing purposes.)

    Now, take a large bowl and mix together extra virgin olive oil and lime juice. Put mango along with onion, yellow bell pepper, cucumber, parsley, bread slices, and orange juice in it and let them soak for around 2 hours.

  • Step 3

    After two hours, put the soaked mixture in a blender jar and blend till it turns into a fine puree. Once done, strain the mixture in a bowl and sprinkle salt and crushed black pepper in it. Stir to mix well and then adjust the seasoning, if you want. Put this bowl in the refrigerator for chilling purposes for half an hour.
