Step 1
Place a deep bottom pan over medium flame and heat oil in it. Once it is hot, add bay leaf, cumin seeds, cloves, peppercorn, and cinnamon stick. Saute the ingredients and once they splutter, add sliced onions along with slit green chilies. Mix these until the onion turns light brown.

Now, squeeze out the excess water from the soaked soya chunks and add it into the pan along with soaked green chickpeas. Sprinkle salt over this mix as per your taste and saute all the ingredients well. Cook for about 2-3 minutes with occasional stirring.

Now, add the soaked rice with an equal amount of water and give it a gentle stir. Let the rice boil for 8-10 minutes. Once half the water has evaporated, reduce to low flame, and cover with a tight-fitting lid. Check after 5 minutes whether the rice is cooked or not. Once cooked, transfer the pulao to a serving plate and enjoy it with chilled raita, enjoy!
