Dil Khushal Recipe
Also known as Besan ki Chakki, Dil Kushal is a traditional Rajasthani dessert prepared with roasted gram flour or besan and is loved by people all over the country. A piece of this delicious dessert is a must-have after dinner in most Rajasthani homes.

Step 1 Roast the besan
Take half the gram flour and roast it in some ghee. You will know when the gram flour is roasted when it shapes like bread crumbs. Now, we need to make a smooth paste out of the besan, so add more ghee and stir till the smoothness is obtained. Add the grated khoya and cardamom to it and keep aside.

Step 2 Prepare a sugar syrup
Boil water and add sugar to it. After a few minutes, add 2 teaspoons of milk and remove any impurities that come to the surface. Boil until the syrup reaches 1 string consistency and do not let it cool down.

Step 3 Mix the sugar syrup with besan and cut out the barfi
Pour the hot syrup into the besan mix and stir well. Now, grease a thali and spread this mix on the thali. Once the mix cools down a bit, cut into desired shapes. Dil Kushal is ready to be served!
