Brinjal fry is a deep-fried authentic Bengali recipe, which is prepared uniquely and has a distinct flavour. The unpeeled and soaked brinjal slices are seasoned with a melange of rich blended and aromatic spices, which are coated with rice flour and then deep-fried in preferred oil.

  • Step 1 Season brinjal with spices and coat with rice flour

    To make this yummy recipe, preheat the required amount of refined oil in a deep bottomed frying pan. In the meanwhile, take a mixing bowl and add all the spices and salt to it. Now season this spice mixture evenly over the slices of brinjal and keep them aside for about 10 to 15 minutes. Now, take each brinjal slice and roll it into a plate full of rice flour and coat all the sides liberally.

  • Step 2 Deep fry the brinjal slices until brown and crisp and enjoy

    After you get all the slices of brinjal coated with rice flour, deep fry them in the oil until they turn brown and crisp from both sides. Drain excess oil on an absorbent towel and enjoy hot.
