Banana Sabzi is a Gujarati Jain recipe which is truly delicious and can be prepared in just 40-minutes. This main dish recipe is cooked using unripe bananas, gram flour or besan, curry leaves, mustard seeds, cumin seeds, asafoetida, and turmeric powder.

  • Step 1

    To prepare this easy recipe, take a large bowl and add unripe banana cubes in it along with asafoetida, red chilli powder, gram flour, turmeric powder, and salt. Mix well all the ingredients.

    Now, put a kadhai on medium flame and heat oil in it. When the oil is hot enough, add the add cumin seeds in it and saute for a few seconds. Then, add mustard seeds in the kadhai and let them splutter for another few seconds. Next, add curry leaves in and cook them for a few seconds as well.

  • Step 3

    Add the marinated banana pieces in the kadhai along with chopped green chilli, and cook for 5 minutes. Afterwards, add the black pepper and salt as per your taste and stir to mix well with the banana pieces. Cover the kadhai with a lid and cook for another 5-10 minutes.

  • Step 4

    Once cooked, remove the kadhai from the burner and uncover it. Transfer the sabzi in a bowl and garnish with coriander leaves, and serve hot with roti or paratha, as you like.
