This payasam is a mouth-watering dessert that you can prepare for your loved ones who are fasting and is super-easy to make. This payasam is made using tapioca pearls or sago, which is popularly known as sabudana and is go-to food during Navratri and Vrat.

  • Step 1 Roast sago in ghee

    To prepare this payasam, heat 1 tbsp ghee in a pressure cooker. Roast the tapioca pearls/sago on a very low flame until they pop. Make sure that stir in between.

  • Step 2 Pressure Cook the roasted sago

    Next, add 1 cup of water along with a pinch of sendha namak in the pressure cooker, and close the lid. Pressure cook sago for 2 whistles over a high flame. After this, reduce the flame and cook for another 3-4 whistles. Switch off the flame and allow the pressure to release on its own.

  • Step 3 Roast cashews & almonds in ghee, and boil milk

    Now, heat 1 tbsp of ghee in a pan and roast the slivered cashews & almonds on a low flame until they turn light golden brown in color. Remove them with slotted spoons and keep them aside until required. Now, put a kadhai or deep-bottomed pan over medium flame and boil the milk, stirring continuously.

  • Step 4 Sauté the grated apple and cook in boiled milk

    Meanwhile wash, peel, core & grate the apple in a bowl. Fry the grated apple in the remaining ghee on a low flame until it turns translucent. Pour in the milk to the above. Let the temperature of both the sauteed apples and milk be the same. Otherwise, it may curdle the milk. Cook this on a low flame stirring continuously for few minutes.

  • Step 5 Cook boiled sago in milk until it reaches the right consistency

    Now, add cooked sago to the milk and give it a quick stir. Pour in the condensed milk and mix well. Let the payasam cook on a low flame for a few minutes, make sure to stir the payasam frequently. Grind the cardamom pods along with sugar into a fine powder, and add it to the apple sago payasam. Allow it to boil on a very low flame for about 5-10 minutes, stirring frequently. Switch off the flame once it reaches the desired consistency.

  • Step 6 Garnish with roasted dry fruits and ghee and serve as you like

    Garnish the payasam with ghee, roasted cashews, and almonds, or any other dry fruits of your choice. Serve apple sago payasam as you like, hot or cold.
