Apple Basundi Recipe

  • 500 ml low-fat milk
  • 1/4 teaspoon powdered green cardamom
  • 2 pieces sliced & slit almonds
  • 2 tablespoon water
  • 2 cup grated apple
  • 1/2 teaspoon lime juice
  • 2 pieces sliced & slit pistachios

For The Main Dish :

  • 8 strand soaked saffron
  • 4 gm sugar-free pellets
  • 1 tablespoon chia seeds

Recipe :

  • Step 1 Boil milk in a pan

To prepare this dish bring the milk to a boil in a thick-bottomed non-stick pan.

  • Step 2 Reduce the milk to half

Reduce the flame and cook for approximately 25 minutes (till the volume is reduced to half), while stirring occasionally. Then add in the saffron strands.

  • Step 3 Add some sugar-free pellets

Add 3 grams of sugar-free pellets and cook on a low flame for nearly 15 minutes (or till the milk thickens like rabdi), stirring continuously.

  • Step 4 Add cardamom

Now add cardamom powder and cook over a low flame for 2-3 minutes. Turn off the flame and let it cool.

  • Step 5 Cook the apples

Take a small non-stick pan and heat it. Add the grated apple, 1 gram of sugar-free pellet, and 2 tablespoons of water. Mix well and cook on a medium flame for 2 to 3 minutes.

  • Step 6 Add in some chia seeds and garnish with nuts

Remove from flame, when cool add it to the milk mixture with soaked chia seeds. Serve chilled, garnished with sliced almonds and pistachios, and enjoy!

Tips :

  • To make this dish more creamy you can add some fresh cream to the milk mixture.

  • You can add also add some dates to add a nice colour.
