  • Step 1 Make tutti frutti

    To make the Tutti Frutti first boil finely chopped muskmelon and ginger in water for about 5 minutes and once done, drain out the extra water. Now add 1 cup sugar and water in the pan along with chopped muskmelon and allow this to boil for a few minutes till the melon becomes translucent. This will take 10-15 minutes. Strain this and divide it into 3 jars. Using food colouring red, yellow and green. Add 2 drops each in jars, stir gently and leave for 30 mins. Strain any remaining sugar syrup out & leave the tutti frutti to dry on some mesh for 24 - 36 hrs. Once dry, they can be stored in an air tight jar.

  • Step 2 Prepare the cake batter

    To make the cake batter first beat 3/4 cup sugar and yoghurt together. Sift the flour, baking powder and soda together. Add 1 spoon grated orange rind, orange juice, vanilla essence, refined oil and the Tutti Frutti to the batter. Fold properly and pour into a buttered pan which has a strip of parchment at the bottom.

  • Step 3 Bake the cake

    Fill the pan and add to a preheated oven and cook for about 40 mins. Once cooked, allow the cake to completely cool down. Run a knife around the sides and turn over and remove the parchment paper.

  • Step 4 Garnish and serve

    Garnish the cake with white chocolate sauce, decorate with tutti frutti, chop into pieces and serve.
