A dessert that no one else will be able to resist, Sitaphal Basundi is a delicious dish that you can make for your loved ones on festivals and special occasions. Basundi is a popular sweet dish from Gujarat that has been relished by people across India for many years. This dessert looks just like rabdi; however, both the dishes are different in taste and flavour. It's prepared slow-boiling milk and then thickening it with cardamom and almond flavours. Over the years, there have been various versions of basundi and is prepared using several fruits.

Step 1 Prepare whey protein milk
To make this enticing recipe, boil milk in a heavy-bottomed pot. Let it simmer and keep stirring continuously, to make sure that it doesn’t stick to the bottom of the pan. Once the milk is boiled and reduced to half its volume, add sugar, whey protein powder, cardamom powder and stir to prepare a thick mixture.

Step 2 Add custard apple pulp and boil again
Cook the mixture for 15-20 minutes. Once done, remove from flame and add the pulp of custard apple. Mix well to combine all ingredients. Garnish with chopped peanuts and serve chilled.

If you like a bit of crunch, add dry fruits in the basundi.

Also, to increase the flavour, you can add condensed milk in it. This would also improve the texture of the basundi.
