Sweet Potato Usal Recipe
Usal is a popular breakfast recipe of Konkani cuisine and is known to be super-healthy. Traditionally prepared using bean sprouts, it might look like a sprout salad to some, however, its quite different from it. Here is another usal recipe which is prepared using sweet potatoes, peanuts, grated coconut and the a few spices.

Step 1 Cut sweet potatoes
Wash sweet potatoes and peel of their skin. Cut into small chunks and soak them in enough water.

Step 2 Prepare the tempering
Put a pan over medium flame and heat ghee in it. Next, add the tempering of cumin seeds, chillies and curry leaves.

Step 3 Fry the sweet potatoes
Now, add the sweet potatoes in the pan and stir to mix well. Then, add salt and water in it and cook well till the sweet potatoes are soft. Finally, add crushed groundnuts and grated coconut. Mix well and close the lid and let it cook for a minute. Add cardamom powder and mix well. Serve hot.
