Step 1 Pressure cook sweet potato and make a dough for the dish
Wash sweet potato properly and cut into half, add it in a pressure cooker along with water and cook for 3 whistles. Once it is done, allow standing time for 2 minutes and then open the lid and let it cool. Keep the sweet potatoes in cold water. Peel the skin and keep in a bowl. Combine milk powder, green cardamom powder, all-purpose flour, saffron and 2 tbsp ghee in it and mix properly. Knead a smooth dough. Once the dough is done, keep aside.

Step 2 Cut small pieces of this dough and shape them
Once the dough is done, cut a small portion of it and give a round shape to it and press from the centre like shown in the picture. Repeat the same procedure to make more such balls.

Step 3 Fry the balls
Now, put a kadhai over medium flame and heat ghee in it. Once the ghee is hot enough, add the balls one by one and fry till they become golden brown in colour. Using a spoon, turn them upside down and fry from both ends.

Step 4 Prepare the sugar syrup
Put another kadhai over medium flame and add water in it. Bring it to a boil and then add sugar in it. Stir well and simmer till the sugar syrup comes into a thick consistency. Once it is done, turn down the flame.

Step 5 Soak the sweet potato balls in sugar syrup
Take those fried sweet potato balls and dip them in the sugar syrup for an hour. This will make the balls soak sugar syrup.

Step 6 Garnish with cashew nuts and serve warm
Once it is done, transfer them to a serving dish and garnish with broken cashew nuts. Serve them warm.
