Step 1 Prepare the turkey before cooking
Make sure the oven is clean to avoid smoking and set an oven rack on lowest position. Preheat the oven at 230 degree Celsius. Remove and discard the truss that holds turkey legs together. Trim off any excess fat in the neck and body cavity and discard. Remove giblets and neck and discard. Rinse the turkey with warm water.

Step 2 Place the seasoned Turkey in the oven rack
Take a heavy stainless-steel roasting pan, rub olive oil all over the turkey and sprinkle with salt and pepper. Set the bird breast side up on the oven rack, pull the wings away from the body and push the wing tips under the bird. Using aluminum foil, form caps over the tips of the end of each drumstick. Insert a digital leave-in thermometer near the center of the breast until the tip touches the bone.

Step 3 Roast the turkey
Place the turkey in the oven and roast for 1 hour until the thermometer reaches 70 degree Celsius. After the turkey is roasted, remove the pan from the oven, tilt the turkey carefully so that the juices from the cavity run into the pan. Transfer the turkey to a cutting board and cover it with foil. Let it rest for 20 to 30 minutes.

Step 4 Prepare the gravy for roasted turkey
Place the same roasting pan on medium flame, remove any excess solids and fats accumulated in the pan. Add the broth and cook, stir the bottom of the pan with a whisk, until simmering. Turn off the heat and set aside. In a saucepan, melt butter over low heat. Add finely chopped onions and cook for 15 minutes until soft and translucent. Whisk in the flour and cook to 2 to 3 minutes. Stir occasionally.

Step 5 Finish the sauce, serve the roasted turkey with gravy
Pour the turkey juice-chicken broth mixture and brandy in the saucepan, and cook for 5 minutes until thickened. Stir in the cream and chopped herbs. Transfer to a gravy bowl. Cut the turkey and serve with the gravy on the side.
