Step 1 Wash the rice and add ghee to it
To prepare this yummy dessert recipe, rinse rice and soak it in 2 1/2 cups of water for 20 minutes and drain. Add ghee to the rice and keep it aside.

Step 2 Boil the milk
Take a saucepan and pour milk into it and keep stirring. Then, turn the gas flame to medium-high and keep stirring. Once the milk starts reducing, turn the flame to low and add in the ghee mixed rice and simmer the milk and rice until it is reduced to almost half.

Step 3 Add in sugar and aromatic spices and serve!
Add sugar and cook for another couple of minutes. Then, add cardamom powder and stir well. Turn off the flame and garnish with cashews, almonds and pistachios. Serve warm or chilled.
Tips :

Don't add sugar to the hot boiling milk as it can often spoil the milk texture.

To make the payesh rich in texture, you can replace regular sugar with dates jaggery.

Adding condensed milk also give a thick and rich texture to your payesh.
