Step 1 To prepare the kebabs
Take a large bowl and put washed mutton cubes in it along with ginger paste, raw papaya paste, onion paste, curd, coriander powder, yellow chilli powder, gram masala, potli masala and salt. Mix everything well and put in the refrigerator for at least 2 hours before cooking.

Step 2 Cook the marinated mutton
In a wok heat half amount of ghee, then add clove and cardamom. After roasting, put the marinated mutton in the wok and add some water, roasted channa powder and stir quickly. Turn the flame to medium and cover it for almost 15 minutes. Now, add the cashew paste, almond paste, chiraunji paste and desiccated coconut powder. Also, add the rose petals paste and poppy paste. Stir it well and let it roast for 10 minutes.

Step 3 Garnish and serve
Now add the saffron and kewra water and cover the lid. Make sure to turn the flame off before adding these flavours. After 5 minutes, serve the kebabs with finely cut onion rings and spicy green chutney.
