  • Step 1 Wash and chop the vegetables

    To prepare this easy recipe, wash the pumpkin and one tomato. Cut the pumpkin into medium-large pieces in a bowl and chop the tomato into small pieces.

  • Step 2 Cook pumpkin with tomato

    Next, heat a tablespoon of oil in a frying pan over medium flame. When the oil is hot enough, add some cumin seeds and saute for a few seconds. Add the pumpkin pieces and add some salt as per your taste, mix well. Next, add the chopped tomato in the pan. Stir and then, cover the pan and cook for 15 minutes (stir occasionally). Finally, switch the flame off after 15 minutes.

  • Step 3 Prepare the masala for khichdi

    Peel and chop one onion & then wash the two tomatoes and chop them into small pieces too. In a pressure cooker, add 5 tablespoons of ghee and let it melt. When the ghee is hot enough, add bay leaves and dry chillies in it. Saute till they the spices are golden brown in colour. Add onions in it and saute till golden brown in colour. Then, add salt, coriander powder, red chilli powder and turmeric in the pan. Stir and cook well for about 2-3 minutes.

  • Step 4 Pressure cook Mix Dal Khichdi for 5-6 whistles

    Now, wash all the dals in a bowl and then wash the rice well. Add the dals in the masala (step 3) and stir well. Cook the dals for 5 minutes and then finally add the washed rice in it. Stir well and then close the lid of the cooker. Turn the flame to high flame and cook for 5-6 whistles. After the last whistle, turn off the flame. Let the steam release on its own, and serve hot khichdi with some ghee.
