Jain-style Minestrone Soup Recipe
Minestrone soup is a heavenly soup recipe that you can prepare anytime for your family and friends on occasions like pot luck and buffet. Though, this soup recipe is traditionally prepared in Italian cuisine, however, this variation is prepared in Jain-style where they do not use any root vegetable.

Step 1
To prepare this soup recipe, add green moong dal in a small bowl and wash in running water. Put a pressure cooker on medium flame and washed moong dal in it along with add 1/2 cup chopped tomatoes and a little water. Cook this tomato and dal for about a whistle and switch off the burner.

Let the steam release on its own and when done, open the lid and transfer the cooked tomato and dal to a bowl and let it cool at room temperature. Once the tomato and dal is cool enough, add to a mixer jar and blend it well to a smooth puree. Strain the puree into a bowl.

Next, put a large pan on medium flame and heat oil in it. Once the oil is hot enough, add the shredded cabbage in it along with chopped coriander leaves. Stir and saute for a few minutes until the cabbage is lightly coloured. Then, add boiled green peas, green beans (cut in long pieces), and the remaining chopped tomatoes along with tomato-dal puree in it.

Give the pan contents a stir and sprinkle some salt and pepper as per your taste in the pan. Mix well and bring the mixture to a boil. Now, add the cooked macaroni and mix once again. Add the boiled rajma or the kidney beans in the pan and stir to mix well. Cover the pan with a lid and let the mixture cook on low flame.

Uncover the pan after 10 minutes or so and mix once again. Switch off the burner and transfer the soup to a bowl and garnish with Parmesan cheese powder. Mix well and serve hot!
