Step 1 Cook grated khoya and sugar, and let it cool
To make this delicious Kesari Modak recipe, take a heavy-bottomed pan and put it over the low flame, and cook grated khoya and powdered sugar in it. Stir for 5 to 10 minutes until the sugar is completely dissolved. Turn off the heat and add cardamom powder to it and mix. Set the mixture aside to cool.

Step 2 Divide the mixture into 2 unequal portions
Now divide the mixture into two parts into two separate bowls, one part being smaller than the second. In the smaller portion, add chopped pistachios, while in the larger portion, add saffron strands.

Step 3 Stuff pistachio mixture into saffron mixture and prepare modak
Now, pull out a portion from the saffron mixture and roll it to form a small disc. Grease the modak mould and put the disc into it maintaining a small space in the centre. Further, make a small ball out of the pistachio mixture and stuff it into the space between the saffron disc in the mould. After a while, open the mould and you are done with kesari modak. Repeat for the rest modak and serve.
