Kesar Rasmalai Recipe

Rasmalai, as we all know it, is a traditional Bengali dessert recipe and is truly delicious. Made with chenna, milk, kesar, sugar and milk powder, this Kesar Rasmalai has an amazing taste and can be easily prepared at home.   • Step 1

    To prepare chenna, bring the milk to boil. Add lemon juice and stir it till the milk curdles. Strain the chenna in a muslin cloth and remove all the water.

    Transfer the chenna to a bowl. Mix with the milk powder, saffron, and cardamom powder. Knead the chenna till the mixture is smooth. Take small balls from the mixture and press lightly to make flat in shape. There should be no cracks on it. Keep them aside

  • Step 3

    To prepare the rabdi: Bring the milk to a boil in a non-stick pan. Boil the milk till it reduces. Add sugar boil it till the sugar dissolves and till the milk thickens. Dip the chenna patties in rabdi and boil for 2 minutes on low flame.

  • Step 4

    When the patties are cooked in the milk, transfer it to a plate. Garnish with saffron and your Rasmalai is ready to serve chilled.
