If you have ever been to Kashmir, you would know that their cuisine is full of flavours with a melange of spices used in making a dish. This cuisine is famous not just for its recipes, but the desserts as well, which are super-delicious yet easy.

  • Step 1 Prepare the sugar syrup

    To prepare this delicious dessert, first, take a large sized pan and place it on medium flame. Then, pour and boil water in it. Once the water is enough, add sugar in it carefully. Next, add green cardamoms and mix well. Keep stirring until the mixture gets a thick consistency. Once done, turn the flame off and let the mixture cool down.

  • Step 2 Knead a dough by adding ghee & sugar syrup

    Now, take a large sized bowl and add whole wheat flour in it. Next, add ghee in the flour and try to bind it. Make sure you add ghee in the required quantity only to make a dough. Then, slowly pour the prepared sugar syrup(step 1) and mix well. Knead properly to form a soft dough. Once done, divide the dough in 10 equal portions.

  • Step 3 Shape the dough as lydes

    Next, take 1 portion out of 10 portions(step 2) and try to give it a shape like that of a small sized stick. Then, roll and twirl it inside to give it a shape of a shell. Similarly, do the same with remaining portions.

  • Step 4 Fry the shaped lydes

    Now, take a large sized deep-bottomed pan and place it on high flame. Then, pour and heat remaining quantity of ghee in it. Once the ghee is hot enough, carefully place the shaped portions in the pan and fry properly from both the sides until brown. Once done, transfer them to an absorbent paper.

  • Step 5 Place in a dish & serve

    Lastly, place the portions neatly in a serving dish and serve. You may serve them warm or cold as per your choice.

Tips :

  • You can also store the prepared lydes in an airtight container for 2-3 weeks.

  • You can serve this with the traditional Sheer Chai for best taste.
