Grilled Pumpkin Salad with Hummus is s simple recipe that can be made for any occasion. It's an easy recipe that vegans can enjoy in lunch/dinner.
Grilled Pumpkin Salad with Hummus Recipe
Ingredients:
- 2 cup pumpkin
- 5 cloves garlic
- 1/2 bunch arugula
- 1/2 cucumber
- 4 onion shallot
- 2 tablespoon virgin olive oil
- 100 gm masoor dal
- 1/2 bunch baby lettuce
- 1 tomato
For Dressing :
- 2 tablespoon extra virgin olive oil
- salt as required
For The Main Dish :
- 2 cup chickpeas
- 4 cloves garlic
- salt as required
- 1 tablespoon tahini
- 1 tablespoon virgin olive oil
- 1/4 teaspoon paprika powder

Step 1 Chop the veggies and grill them in oven
To prepare this easy recipe, peel and cut the pumpkin into cubes. Next, place them in the oven and grill with a dash of oil. Next, place the shallots in the oven and grill them as well with skin on. (You can remove the skin later on.)

Step 2 Grill the garlic cloves
Once done, place a few garlic cloves in the oven and grill them as well.

Step 3 Toss the grilled veggies with cucumber & tomato
Now, take a large bowl and add grilled pumpkin in it along with peeled & grilled shallots. Next, add in the grilled garlic cloves. Finally, add in the boiled masoor dal or red lentil with mixed salad leaves. Toss them well and add sliced cucumber & tomatoes. Keep aside.

Step 4 Prepare the dressing for salad
To prepare the dressing, mix together olive oil, lemon juice, salt & pepper to taste.

Step 5 Let's make some hummus
Now, to prepare hummus, blend chickpeas with tahini sauce, lemon juice, olive oil, garlic cloves & salt to taste. Serve it with sprinkled paprika on top and a drizzle of olive oil.

Now, pour the dressing over the grilled veggies and toss well. Serve this pumpkin salad with hummus and enjoy.
