Goshtaba Recipe
Goshtaba is an authentic Kashmiri delicacy. It is prepared using variety of exotic spices in an unique way. When the flavours of the spices and herbs infuse in the mutton dumplings they simply taste incredible. It is a wonderful combination of a delectable gravy that has a perfect consistency along with the blend of amazing mutton dumplings. You simply cannot resist without having this delectable curry.

Step 1
To prepare this delectable curry, first, take a medium sized bowl. Then, add minced mutton along with salt and mustard oil in it. Now, mix well and keep aside for a while.

Next, take a soft cloth and add cumin powder along with fennel powder, coriander powder, kasoori methi, clove, cardamom powder, crushed cardamom and salt in it. Then, tie the ends of the cloth and make a pouch out of it. Keep aside for a while.

Now, take a deep bottomed vessel and place it on high flame. Then, pour 4 glasses of water in it and let it boil. Once the water has boiled, take the spice pouch(step 2) and place it in the water carefully. Also, add bay leaves directly in the water.

Next, make small round dumplings from the minced mutton mixture(step 1) prepared. Then, transfer all the dumplings in the boiled water carefully. Cook them until the broth disappears and then turn the flame off. Once the water reaches room temperature, carefully squeeze and remove the cloth pouch from the vessel.

Now, take a separate medium sized wok and place it on low flame. Then, add cumin seeds along with yogurt in it. Also, add ghee and stir well for a while. Make sure that the curd doesn't curdle. Then, transfer the prepared mutton mixture(step 4) in this wok and stir well. Stir for next 4-5 minutes and then turn the flame off.

Lastly, transfer it to a serving dish. Garnish it with coriander leaves, few strands of saffron and serve hot.
