Step 1 Prepare the masala
To prepare this recipe, start by making paste of onions, ginger, garlic and green chillies, by blending them together.Next, take some oil in pressure cooker and add cumin seeds and asafoetida. Add the prepared paste in the cooker and saute for 5 minutes, until it turns brown. Lastly, add red chilli powder, coriander powder and turmeric powder. Add salt and let cook for a few minutes.

Step 2 Add tomato puree
When the masala is cooked properly, add tomato puree and stir vigorously for 5 minutes or until oil starts leaving the dish.

Step 3 Add potato and lotus stem
Now add potato cubes and sliced lotus stem and keep stirring for 5 minutes. Add water and let dish pressure cook for 2 whistles.

Step 4 Garnish with coriander and serve
Let the pressure in the cook reduce naturally. Once done cook on low flame for 5 minutes and adjust salt and spice to taste. Transfer the bhaji to a serving dish and garnish with coriander and green chilies. Enjoy the delicious meal with warm naan or roti.
