if you love Mexican food, you won’t be able to resist these Healthy Vegetarian Mexican Flautas. Packed full of flavor, these flautas are easy to make, kid-friendly, and perfect for a healthy weeknight meal.
These Vegetarian Flautas were quick and easy to make - with basically little to no prep. The Avocado Cream was delicious as well - it also paired great with tortilla chips as a dip!

Step 1 Boil the potatoes
To prepare this easy recipe, put a pressure cooker on medium flame and add potatoes in it with enough water. Close the lid and pressure cook them until soft or for 2-3 whistles. Once done, turn off the flame and let the steam release on its own. Then drain the water and take out the boiled potatoes in a bowl. Peel and mash them using a masher, as you don't want to burn your hands.

Step 2 Prepare the potato filling
To make the filling, heat butter in a pan over medium flame and add crushed garlic to it. Saute for a few seconds and then add mashed potatoes to it. Sprinkle cumin powder and season with salt to taste. Mix well and remove from heat.

Step 3 Microwave corn tortillas and add potato filling in the center with some cheese
Preheat the oven to 180 degrees. Once done, microwave the corn tortillas for 30 seconds. Place the potato stuffing in the center of each tortilla and add cheese over the stuffing. Roll the warm tortillas tight and place them on a baking tray. Repeat till all the tortillas are filled and rolled.

Step 4 Bake potato-filled corn tortillas for 10-12 minutes
Bake them for 10-12 minutes or till the tortillas nice golden brown and crisp. Your Flautus are ready to eat.

Step 5 Serving Flautus
Place the Flautas on a serving plate and serve hot with sour cream, lettuce, and salsa sauce. (Note: You can also use homemade salsa sauce to go along with this dish.)
