Jackfruit, Edamame and Zucchini Platter is another easy recipe that you can prepare for your lunch/dinner. All you need to do is saute some veggies - edamame, jackfruit and zucchini.

Jackfruit, Edamame and Zucchini Platter Recipe

Ingredients:

  • 1/2 cup edamame beans
  • 1 cup boiled chickpeas
  • 1 avocado
  • Himalayan salt as required
  • 1 tablespoon ghee
  • 1 cup boiled jackfruit
  • 1 zucchini
  • 1 teaspoon mixed herbs
  • 2 tablespoon virgin olive oil

For Dressing :

  • 2 tablespoon peanut butter
  • 1 tablespoon tamari
  • 1 teaspoon sriracha powder
  • 2 teaspoon rice vinegar
  • 1 tablespoon maple syrup
  • 1-inch ginger

Recipe :

  • Step 1 Saute edamame and chickpea

    To prepare this easy recipe, put a pan over medium flame and melt a little ghee in it. Add chopped edamame in it and saute for a while. Next, saute the chickpeas with some salt. Keep aside until required.

  • Step 2 Saute zucchini with mixed herbs

    Now, cut zucchini in noodle shape and sauté with mixed herbs with salt.

  • Step 3 Saute jackfruit

    Next, if you have an air fryer at home, coat jackfruit with a little coating of salt and ghee and cook. Or, you can simply sauté them in a pan till brown and crisp.

  • Step 4 Prepare avocado salad

    Now, cut the avocado into two halves and sprinkle olive oil and sesame seeds.

  • Step 5 Make peanut dressing

    To prepare the peanut dressing, in a blender jar, add peanut butter, rice vinegar, tamari, maple syrup, sriracha powder, and ginger. Blend well to make the peanut dressing.

  • Step 6 Prepare the platter

    Lastly, when all the veggies are sauteed, arrange them on a plate side by side with avocado on top, and enjoy with this fresh peanut dressing.

Tips :

  • To make it more flavorsome add some roasted spices.

  • You can add some meat or eggs to add to the taste of the platter.
