Step 1 Wash and soak rice
To begin with, take rice and wash it under running water. Next, fill the rice bowl with enough water as to submerge them. Then, let soak for about 2 hours. In a separate bowl, wash and soak urad dal.

Step 2 Boil rice
Once done, drain the water. Take a deep bottomed pan, transfer the rice in the pan and fill it yet again with enough water and boil until tender. Once the rice is cooked drain the water and keep the rice aside.

Step 3 Toss the sesame seeds
In the meanwhile, place a pan on medium flame, put white sesame seeds, and dry roast for not more than a minute. Next, transfer the seeds in a grinder and grind into a fine powder.

Step 4 Toss the spices
Then, add some oil to the same pan, add mustard seeds along with urad dal and red chilies once the oil is heated. Once the seeds starts to splutter, add curry leaves and saute for a while.

Step 5 Add cooked rice and enjoy
Once done, add the cooked rice along with the prepared white sesame seed powder and stir well until fragrant. Serve hot. Garnish the way you like and enjoy with some chutney and Sāmbhar.
