  • Step 1

    To prepare this Mexican soup, first, neatly wash and dice onions, jalapenos, tomatoes. Out of 4 lemons, cut wedges out of 2 and juice the remaining.

    Now, take a medium sized cooking pot (kadhai)and place it on medium flame. Next, add some oil along with onions in it. Cook the onions until transparent. Next, add jalapenos and stir well until cooked properly.

    Now, place the pot on medium high flame. Add chicken broth, beans in it and let it boil. Once boiled, add cherry tomatoes and let it simmer for next 10 minutes. After a while check if the curry has thickened or not. Add chicken breasts after it thickens and cook it for next 25-30 minutes. Add salt and pepper as required. Keep checking, once your chicken has cooked, turn the flame off and let it cool. If your chicken has not yet cooked, keep it on heat for another 10 minutes and wait for it to cook. After your chicken has cooked, shred it. Add lime juice and fresh cilantro in the pot.

    Lastly, place some shredded chicken in the soup bowl and pour it with soup. Serve hot with tortilla chips, avocado slices and cheese. Also, decorate the platter with lemon wedges.
