Surat Vati dal na Khaman is a popular street food of Surat.  Today we will make this Gujarati Khaman recipe. This surti khaman recipe is prepared from chana dal and rice. Vati dal na khaman is enjoyed on the streets of Surat with the tasty green chutney. Surti Vati Dal Na Khaman is also used to prepare the popular Rasavala Khaman of Surat. 

Khaman is a snack common in the Gujarat state of India made from soaked and freshly ground channa dal or channa flour (also called gram flour or besan). Every morning, Lariwala(Stollman) sells Khaman to working people where I grew up. Generally eaten as a snack, it is mostly served with sev, fried chilies, and chutney as a breakfast, snack, or light lunch. In some shops, it is also served traditionally in a large green leaf. Sometimes it is also garnished with scraped coconut. Khaman, often part of the Gujarati Thali (traditional dish containing various components of a full meal) is very similar to dhokla, in which the batter is made with a mixture of rice and lentil flour, resulting in a distinct texture and taste. Nonetheless, Khaman, Khaman-Dhokla, and Dhokla are often used interchangeably and are synonymous with a steamed snack made with a batter composed of lentil flour or a mixture of lentil and rice flours. Although a Gujarati snack, it has become increasingly popular across India, as well as in other regions with a sizable Gujarati community.

Ingredients:

  • 2 Cup of Chana dal
  • Water (For Boil)
  • 2tp Spoon Yogurt
  • 1/2tp Spoon Of Turmeric 
  • 1/2tp Spoon Asafoetida
  • 2tp Spoon Ginger Green Chilli Pest
  • Salt (As Per Test)
  • 1/2tp Spoon Cooking Soda
  • 2tp Spoon Harm Oil
  • Red Chilli Powder ( For Sprinkle)

For Tempering:

  • 2tp Spoon Oil
  • 1tp Spoon Mustard Seed
  • 6 to 7 Pieces of Curry Leaves
  • 2 Glass of Water
  • 1tp Sugar

સામગ્રી:

  •  2 કપ ચણાની દાળ
  • પાણી (પલાળવા માટે)
  • 2 ચમચી દહીં
  • 1/2 ચમચી હળદર
  • 1/2 ચમચી હીંગ
  • 2 ચમચી આદુ અને લીલા મરચાની 
  • મીઠું (પરીક્ષણ મુજબ)
  • 1/2 ચમચી રસોઈ સોડા
  • 2 ચમચી ઉફાળું તેલ
  • લાલ મરચું પાવડર (છંટકાવ માટે)

વઘાર માટે:

  • 2 ચમચી તેલ
  • 1 ચમચી મસ્ટર્ડ બીજ
  • 6 થી 7 નંગ મીઠા લીમડા ના પાન
  • 2 ગ્લાસ પાણી
  • 1 ખાંડ

Tips:

  • firstly, make sure to soak the dal well else it will be difficult to blend.
  • additionally, the steam well may remain uncooked from the center.
