Belle Holige Recipe
Bele Holige, also known as Puran Poli is a tempting stuffed snack prepared for the festive season. It is specially made on Ugadi and is a popular dish from South India. The paratha is made using maida and the stuffing is prepared with chana dal and jaggery.

Step 1 Prepare the dough
Prepare the dough by mixing all-purpose flour, turmeric, salt and water as per need. Once the dough is prepared, cover it and let it rest for 30 minutes.

Step 2 Pressure cook the dal
Now add chana dal, turmeric powder along with 1-2 cups of water in a pressure cooker. Cook until done. Strain the excess water and collect the cooked dal in a bowl.

Step 3 Prepare the stuffing
In order to prepare the stuffing, heat a pan on medium heat. Add 1 tbsp ghee to a pan, add jaggery and let it melt completely. Add cooked chana dal and mix well. Once the mixture thickens, mash well to prepare a smooth stuffing.

Step 4 Prepare stuffed maida balls
Now make small balls from the maida dough and stuff them with the prepared mixture. Dust them well with flour and roll them out using a rolling pin.

Step 5 Heat a tawa
Put a tawa on medium heat. Place the rolled out parantha and apply some ghee on it. Cook from both sides until golden and serve.
