Aasmee Recipe

A traditional Sri Lankan recipe, Aasmi is here to steal your hearts right away. This delicious and irresistible dessert snack recipe is the most popular sweet in Sri Lanka and is served in literally all their festivals and special occasions. A deep-fried sweet snack, aasmi is prepared with a conglomeration of coconut milk and rice flour, combined with the juice extract of kurundu leaves (cinnamon leaves) and fried deep in the oil.

  • Step 1 Combine coconut milk and rice flour to make a stiff dough

    To make this yummy recipe, sieve the rice flour through a fine sieve to filter any unwanted particles. In a medium-sized bowl, combine coconut milk, rice flour, and salt. Knead a smooth and stiff dough out of them.

  • Step 2 Add cinnamon leaf extract to the dough and make a batter

    Next, take cinnamon leaves (also called daul kurundu leaves) and grind them. Extract juice from the kurundu leaves and add to the coconut-rice flour dough. Stir until you get a slimy consistency. If you want, you can add more coconut milk to get a batter with perfect pouring consistency.

  • Step 3 Pour the entire batter into oil to deep fry and keep aside for few days

    Preheat refined oil in a deep bottomed frying pan on a medium flame. After the oil is hot enough, arch your fingers and push the entire batter into the hot oil and deep fry. After the batter is cooked through, transfer into a dish and cover it. Keep it aside for a few days.

  • Step 4 Prepare the coloured thick sugar syrup for the topping of aasmee

    After a few days, prepare a sugar syrup by simmering water with sugar and edible food colour. After you get a very thick consistency, keep it aside to cool.

  • Step 5 Fry the aasmee again and design with coloured sugar syrup

    Preheat refined oil in a deep bottomed frying pan and fry the aasmee again to make it light and crispy. Design the aasmee with the coloured thick sugar syrup by making beautiful designs and swirls. Serve fresh.
