Zafrani Murgh is yet another speciality from the cuisine of delicacies, The Mughalai cuisine. It is a typical chicken curry recipe that is high in flavours and is cooked in cashew paste to add a vibrant and mouthwatering flavour.

Step 1 Soak the saffron strands and wash the chicken
Take 3 saffron strands and add them to a small bowl of water. Keep it aside. Wash and clean the chicken and pat dry.

Step 2 Prepare the chicken marinade
In a bowl, add the curd and lemon juice and mix well. Now to the same bowl, add all the spices along with the saffron water. Mix everything well then add in the boneless chicken. Coat each piece well and marinate for at least 2 hours in the refrigerator.

Step 3 Cook on medium-low heat and serve!
Now heat a pan and add the marinated chicken to it. Stir it well, cover with a lid and let it cook on medium-low heat for at least 20 minutes. Once the oil comes to the surface and a nice aroma comes out, turn the flame off. Garnish with fresh cream and coriander leaves and serve with some hot naan!

You can cook the dish in 2 tbsp pure desi ghee for a better flavour.

Add a paste made with fried shallots and cashew nuts to the marinade for an authentic Mughlai flavour in the gravy.
