Wagashi Recipe
Wagashi is a traditional Japanese dessert recipe that is served on the cultural Tea ceremony in Japan. Step 1
Take the soaked and peeled sweet potatoes and add them to a pan of water. Place this pan over low flame. Cook the potatoes over low heat for 8-10 minutes or until they have softened. Once done, remove from heat and strain all the excess water and transfer the cooked potatoes into a large bowl.

Now, sprinkle salt and sugar and mix well with the potatoes. Using a fork or a spatula, mash the potatoes and mix the sugar along with salt in these. Transfer the mashed potato mixture into a round mould. Cover it with cling film and refrigerate the mixture until it hardens.

In the meantime, in a bowl, add a small amount of water and sweet rice flour. Mix it well and then add the cake flour and a pinch of salt. Whisk the ingredients well to ensure that there are no lumps. Now, take the mould out from the freezer and cut the chilled potato filling into small pieces in a shape of your choice and dip each piece into the flour mixture.

Sprinkle the black sesame seeds onto the dipped pieces so that they stick to the flour mix. Now, heat a non-stick pan on low flame and add vegetable oil to it. Once it is hot, place the potato pieces onto the pan and let these cook until golden brown in color. Once done, remove from flame and let these cool for a while. Serve these with a hot cup of tea and enjoy!
