Veggie Enchiladas Recipe

Step 1
Heat oil in a large pan over medium flame. Add the chopped green capsicums to it and cook for sometime. After a minute, add chopped onions and garlic in it. Cook well and when the onions appear translucent switch the flame to low.

Once the veggies are cooked well, transfer them to a separate bowl. Now, boil the corn in a small vessel and once they are soft add them to the same bowl along with green olives, salt, cumin powder, coriander powder and half enchilada sauce. Place the remaining enchilada sauce in a separate pan and warm over a medium flame.

Transfer this warm enchilada sauce into a pan and one by one dip the tortillas in it, till they get an even coating of the sauce. Add the mixture prepared above in the bowl in the center of the tortillas. Start rolling them tightly from the sides, enclosing the filling. Your Veggie enchiladas are now ready to be served.
