Tofu Rice Mix Recipe

Ingredients :

  • 1/2 cup soaked brown basmati rice
  • 200 gm chopped into cubes of tofu
  • 1 chopped onion
  • 1 chopped green chilli
  • 1 teaspoon coriander powder
  • 1/2 teaspoon powdered bay leaf
  • 2 pinches salt
  • 200 gm washed & dried, chopped button mushroom
  • 6 leaves washed & dried, rinsed spinach
  • 1 diced star fruits
  • 1/2 inch chopped ginger
  • 1 teaspoon thymol seeds
  • 1 tablespoon extra virgin olive oil
  • 4 cup boiled water

Recipe :

  • Step 1

    To make this easy recipe, soak the brown rice for around 3-4 hours. Then wash mushrooms in warm water.

  • Step 2

    Wash spinach leaves in saltwater and rinse. Cut cubes of Tofu and rub black salt on the diced tofu pieces. Keep it aside.

  • Step 3

    Now dice the star fruit and chop mushrooms, onion, ginger and green chilli.

  • Step 4

    Then put oil in a pan, add thymol seeds along with the onion. Stir for a while and add chopped mushrooms.

  • Step 5

    Cover the pan and cook on low flame (do not brown them) and add coriander powder, chopped green chilli and ginger. Cook again for 3-4 minutes.

  • Step 6

    Drain the water of rice and add them to the pan. Stir well and cover the pan, allow the rice to get cooked.

  • Step 7

    Then add salt in rice and toss to mix. Now add tofu, spinach leaves and star fruit to the rice. Cover the pan and put off the flame.

  • Step 8

    Open the lid to sprinkle some bay leaf powder on top. Cover again and allow the steam to reach every ingredient in the pan.

    Tofu rice mix is ready, serve it hot.
